For a few reasons it's not worth it...
First, most people are used to audio interview over places like their radio where it's already mono. Most people are comfortable with that.
Second, it's more hassle to adjust the audio that way for 2 or more people.
Third, it means you audio files will be stereo instead of mono. That means files that are a lot larger.
So, I would suggest just keep everything straight forward and mono.
When recording two people during an interview or show is it work offsetting the balance for each of them? What I mean is worth setting the balance slightly left for person 1 and slight right for person 2? Or this just plain annoying and confusing after a while?
