What is the best way to do mobile podcast recording?
I have a Power book G4. The handheld digital recorders record in WAV and MP3. They also record two tracks. After the recorder records, can the tracks be separated for production purposes on an Apple Computer?
An expample of a recorders is the Marantz PMD660 Handheld Compact Flash Recorder.

Also, I saw someone use the Marantz compact recorder to transform their audio from a mixing board to digital. Is this a good idea?

I'll chime in
I'll chime in on this since no one else has....
First, the Marantz recorders are good stuff. So you're in good shape having one. As far as recording '2 tracks' you're really just recording stereo (a stereo recording is 2 tracks). Can these be split afterwards? Absolutely. It will depend on the software you're using as to how easy that can be done...but yes, it can be done for sure.
You might have to describe your 'mobile recording' situation a bit better, though. Are you recording two people speaking? Are you recording from a mixing console? Are you using microphones? A bit more info about your situation might help.
As far as using this as a converter (I'm thinking that you are talking about running analog into it, then using the immediate digital output somehow)...The converters in this will be pretty good, but not necessarily intended for this purpose. The quality will be exactly what you'd get when recording onto the recorder itself....once it's digital, it will sound the same whether you pump it out to something else or record it. I don't see an issue with this as a quick fix, but for long term, you'd want to consider a real analog/digital converter for your setup.

Using the recorder to do a two person interview.

I was planning on using the recorder with two mics and doing a two person interview. Then, after recording an interview in the field, taking the two tracks(right and left) and working with them in Garage Band.
